These are a real delicacy as they are hard to source but due to the age of the animals they are utterly delicious. The cheek muscle must be slow-cooked in order to achieve maximum softness, as it is a working muscle. Loved by our Chefs, when slow braised you can literally eat them with a spoon. Delicious.
